Educating the new generation of chefs at LE MONDE
– Creative cooking seminars by chef Alexandros Tsiotinis and Giannis Bourodimos powered by HAPO
HAPO supports the consistent education and training of future chefs on Greek aquaculture fish. As such, HAPO has partnered with Le Monde, the Institute of Hotel and Tourism Studies, by offering fish for the cooking classes and interactive seminars for the students.
In the context of the newly created Fish from Greece Cooking Academy by HAPO two training seminars took place in November and December 2021, in collaboration with the ambassadors of Fish from Greece- chef Alexandros Tsiotinis and food blogger – cook, Giannis Bourodimos.
During the 1st seminar, “The creative cuisine of Alexandros Tsiotinis with Fish from Greece” the chef inspired students by presenting three original recipes: pagrus major tartare in the style of an Athenian salad, with mastic tears, sea bass fricassee with baby lettuce and buttermilk sauce, and The Classic Unclassic Burger from meagre.
In the 2nd seminar, “Light recipes, Fish from Greece prior and after the holidays by Giannis Bourodimos”, the popular cook and food blogger prepared Sea bream fillets with coconut and pomegranate salsa, braised meagre fillets in orange and mango juice, pagrus major alla puttanesca with spinach and whole grain pasta, and Asian noodle salad with sea bass.
Fish from Greece Cooking Academy seminars will continue next year, highlighting the quality, freshness, taste and versatility of Greek aquaculture fish.
