2 large Fish from Greece sea bass fillets
1 orange (juice and zest from half, the rest peeled and sliced)
150 gr. string beans
50 gr. edible pod-peas (mange tout)
80 gr. angel hair pasta
2 tsp. red curry paste
1 tsp. fish sauce
3 spring onions, finely chopped
Cilantro or fresh basil
Line a steamer with a sheet of baking paper and place the fish lightly salted, with the orange zest. Then place it over boiling water in which the string beans are being cooked.
Cook the fish until done and remove, adding the mange tout and peas to boil.
Strain the vegetables keeping the water, in which you will soften the noodles for 5 minutes.
Mix the curry paste, fish sauce, juice, and spring onions.
Add the pasta, vegetables, herbs, orange slices and fish broth in a bowl and serve with the fish.
